I love this stuff and it's easy to make. Great on toast, steamed vegetables, etc..

Organic virgin coconut oil - 1 cup
Organic flaxseed oil - 1 cup
1 large onion, finely chopped
Herb salt to taste

Gently saute the onions in 1/3 of the coconut oil for 10 minutes or so.

Let cool, and spoon into clean glass jar.

Add the rest of the coconut oil, the flaxseed oil, and herb salt. Shake very well.

Place in the fridge, turning every 15 minutes as it sets so all the onions don't end up on the bottom. (And it's a really good idea to make sure the lid is on nice and tightly. Learned that the "Bugger, now I've got a greasy fridge" way.)

Depending on how firm you'd like it to be, you can fiddle around with the ratios of flaxseed oil and coconut oil. The more coconut oil you use, the firmer it will be. If you like a soft spread with a nuttier tang, use more flaxseed than coconut oil.

Enjoy!
