What's the name of the sugar you're supposed to mix in with melted chocolate so that it goes crunchy?

:confused: do you mean brown demerera sugar? thats quite granular and doesnt always dissolve right down or do you mean the coffee sugar that is almost crystal like?

demerera rings a bell...I'm sure the sugar was white though..:S

you can get a golden demerera or there is another sugar the same size granules but pale beige colour? the make is billingtons. its in most supermarkets sugar section.
