Young coconuts

i've got a book with a few recipes that call for young coconut flesh. the only ones i've seen in the UK are the older, dried, hard flesh types.

anyone any ideas for these in the UK?

Do you mean ideas for the older coconuts? Or substitutes for young coconuts? If the latter, maybe try creamed coconut/coconut cream?

sorry that wasnt very clear at all.

i mean i have recipes that call for young coconut meat (when it is still moist and gooey) but i cant ever find any young coconuts.

so its the young coconuts to buy i'm after, im wondering if anyone knows of any importers etc. i have googled but cant see anything.
