this soup is soo fantastic. very rich and creamy, and perfect served with some healthy bread, straight from the oven and a heavy salad, filled up with proteins. or served as a light lunch, just as it is - serve and enjoy!

500 g. of washed/peeled jerusalem artischoke, chopped
1-2 chopped onions
1 250 ml. pack of soy cream

fry the vegetables in a good olive oil - about 1/2 dl, for 5 minutes on medium heat.
cover the jerusalems artischokes with water, and boil until tender. give it a go in the blender, until smooth. boil, and take of the heat. pour in the soy cream and taste with salt and pepper.

very yummy, and a great (and easy) way to make your dinner guests think you're an amazing cook.
