either veg or sunflower. i use sunflower, but any mild tasting oil will do. so not sesame or olive...

This book rocks (we got it for xmas this year). Here's a couple of my recent late-night cupcake baking forays:

Maple cupcakes with vegan buttercream icing and candied walnuts (soooo good!):

Coconut cupcakes with lime vegan buttercream icing and toasted coconut (when chilled, quite similar to key lime pie)

My icing technique needs some improvement, but since I've never baked cupcakes before, I'm pretty happy!

Yay my copy came in the post this morning.

These are chocolate mint ones (didn't have any green colouring lol).

OMG, I just want to lick the screen! I love icing, I like the icing more than the cake itself. That icing looks so creamy and delicious.

Has anyone ever made the Dulce Sin Leche one? I am bringing them to a gathering on Saturday with my (nonvegan) friends, and am trying to decide which ones to make. (Also, I don't want to repeat any I have made as I am trying to make all of them:))

I recently made the vanilla cupcakes with the fresh fruit/icing combo in the low-fat vanilla section. I used strawberry preserves and fresh sliced strawberries on top. They were divine! I enjoy mixing and matching the cupcakes and icing from different recipes.

I think I'm going to make the lemon macademia ones soon.

I agree. I made the Earl Grey variation of the Chai Latte cups, and matched it with the lemon buttercream. It was perfect!

I just got this book yesterday and made the chocolate and vanilla marble cupcakes. They were nice but I messed up the frosting as I didn't realise the ingredients list was on a separate page so didn't buy the shortening I needed. I've just skimmed through the thread and see that we can use Trex or White Flora. Where in the supermarket can I find these, also are there any more options for shortening?

I've read through the chapter on tool needed and ordered an oven thermometer. My oven is 40 years old so maybe thats the reason my previous baking attempts have been pretty crap :o I'm wondering about these shiny aluminium muffin pans they say we need. I can't find any for a reasonable price. Are they really better than the non-stick coated kind? I can't see how it would make a difference really when we're lining them with paper cases anyway :confused:

Maisie, you really don't need the shortening, you can use all margarine instead (in case you do want to try it the shortenings are in the margarine section at supermarkets). As for baking tins, I've got two kinds of muffin pans, non-stick and those flexi-silicon ones, both of which work fine with the muffin cases, so yeah the aluminium ones aren't really necessary.:)

Maisie, you really don't need the shortening, you can use all margarine instead Thats what I did but the frosting was really runny and I ended up putting in all the icing sugar to try and thicken it up. Maybe I measured something wrong somewhere.

I'm glad I don't need the aluminium trays but I think I will go buy a tray with more holes. The 12 hole tray I have wasn't enough for all the mixture. I'm looking foreward to making another batch of cupcakes later, I haven't decided which ones yet though :)

ETA I have one more question: Are cornstarch and cornflour the same thing?

I really must use this book had it about 6 months and still not used it

Which recipe do you use the most - as in im sure there were 2 main recipes 1 with oil 1 with marg ,never found cakes with oil nice?


Wow, over 6 mths, get to it !! I always do the gluten free vanilla and chocolate ones.


Il try to make some soon what oils everyone use? Only got olive oil and sesame oil here - not quite right that!!! will add some to shopping list.

I use Canola or Macadamia

i love the way the carrot cake recipe makes the tops come out all crunchy! yummmmmmmmmmmmmmy. one of the simplest recipes but still to die for.

Mmm kitteh, those cupcakes look fab. I made the oreo ones for a bake sale (not gluten free, just the basic chocolate cupcake) and they sold so fast!
Yesterday I made the Earl of Grey cupcakes with orange buttercream and they were very tasty. They are a variation of the Chai Latte cupcakes that I think I like better, but still, they were good and quickly eaten!

Can anyone please tell me what pineapple preserves are? They're an ingredient in the banana split cupcakes.

I think it means like a jam or jelly. I'm pretty sure I've seen them on the shelf with other jams.

It's nice and we have heaps of it in Australia.

I made the coconut cupcakes on the weekend, I basically added the coconutty ingredients to the vanilla gluten free cupcakes and then I made the lime icing and added some coconut and a piece of lime, yum! Will post a pic when I upload 'em.
