I've been experimenting today, I used the basic chocolate cupcake and did these

with a fluffy peppermint frosting, half a chocolate mint thin and drizzled them with chocolate ganache:)

and had a bash at the peanut butter-cream frosting

which doesn't stand up as well piping - but sure does taste rather nice, and again some more ganache drizzled on top!:)

Yes i think she could, of course there'd be a need for a chief taster. Not sure but i think i have someone in mind.

wauw. they look amazing. much better than the ones i've done. now i'm a bit jealous:) i want a cupcake decorating set..

yes they look absolutely fantastic. Mine have all looked less lovely - but I have to say that everything i've tried out of that book has been delicious - much better than non-vegan cakes tasted

It would have to be in an unpaid capacity....I'm not sure how much of a profit margin there is to be had from cupcakes:)

Well i guess it would depend on how many were eaten before sale, i think i could be quite thorough.

Kevster, behave yourself!! I will not allow fighting over them....I will bake double instead!!:p - or maybe quadruple if I'm ever going to make any money!!;)

But they would be worth fighting over... but yes i concede that cooking a much larger amount is likely to be to our mutual satisfaction.

I now have this book, and am going to try making a few soon....

I made the rosewater pistachio cupcakes...they were the most moist cupcakes I've made thus far, but they're my second to last favorite (only the low-fat vanilla I liked less). They were OK, but I ended up actually throwing the last one away because I was just tired of them--first time ever with cupcakes--even after I gave about 3 away. (The low-fat vanilla I gave about 6 away.)

i just made the chocolate cherry creme ones last nite. between my parents and coworkers, they're all gone! definitely have to make some more now.

I made the carrot cake cupcakes w/ cream cheese frosting last week and they were FABULOUS. They had raisins and walnuts, which I'm not always a big fan of, but they were just great. I always plan to try to get all fancy and garnish and decorate them, but I never seem to have the time or energy to do it in the end.

i have the book but havent had the time to go about looking for the wierd stuff you need to make these cupcakes all fancy & shtuff...

youre just going to eat them anywaysss!!!!:D

I made the mocha cupcakes and coffee buttercream frosting. I found that the cupcakes need a little more instant coffee and the frosting needed about half-again the amount of coffe in the recipe. Given that, they were excellent! I'm making another batch this weekend.

I think the chocolate cherry creme ones will be my next project, but the apple cider ones sound so good.
