a friend sent me this.
Cinnamon Oatmeal Raisin Cookies
* 1 cup soy margarine MEAT-EATING MONSTER)
* 1 cup brown sugar
* 1 cup white sugar
* 2 tsp vanilla
* 2 tbs rice milk
* 6 tbs apple sauce

* 2 cup flour
* 1 tsp baking soda
* 1 tsp baking powder
* 1 tsp salt
* 2 tsp cinnamon

* 2 cups oats
* 1 cup raisins

Directions:

1) Preheat oven to 350 degrees Farenheit.

2) Combine margarine and the sugars and beat until creamy.

3) Add in vanilla, rice milk, and apple sauce and beat some more until it's all evenly distributed and nice and creamy.

4) In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon until they're all mixed together evenly.

5) Add the dry ingredients and the wet ingredients and mix together .

6) Add the oats and raisins and mix them all together.

7) Evenly place clumps of cookie dough, say round clumps approximately 3/4 inch in diameter , on an ungreased sheet.

8) Put in the oven and back for about 8-10 minutes, until they no longer look raw, even in the middles.

9) Remove from the sheet soon after removing after the oven ( don't let them cool on the sheet or they'll stick.)

I found this recipe off Cooks.com. It's eggless but it contains butter, which you can easily sub. with Earth Balance. I'd omit the salt because EB is salted and I don't think they make a unsalted EB...

2 sticks butter, soft
2 cups light brown sugar, packed
3 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
2 cups quick cooking oats
1 cup raisins, rolled in flour
2 1/2 cups flour
1 cup sugar
2 tbsp. water
2 tbsp. vinegar
1 cup chopped pecans (optional)

Preheat oven to 350°F.

Combine sugars and butter. Add vanilla, water, and vinegar; mix well.

In a separate bowl, combine flour, baking powder and soda, followed by salt. Combine the two mixtures together. Add raisins, which have been lightly rolled in flour, and oats; mix together well. Add pecans if desired.

Roll dough in small balls with about 6-9 cookies per ingreased cookie sheet.

Bake for 10-12 minutes. Cookies won't look ready at 10 minutes but take out and let sit for 5 minutes in order to be chewy.

holy crap are they EVER delicious. if you like them crisper on the outside, cook them 12 minutes. if you like them softer, 10 minutes. i also added a little bit of cinnamon to half the batter, either way is really good but i liked the touch of cinnamon better. i also added vegan chocolate chips. i made these for steevs work lunches, but i tasted them and theyre sooooo perfect.

i know roxy really likes cookies as a treat, and roxy i think youd really really love these cookies. theyre sooooooo good.
