They are certainly better than commercial chips!
I don't consider any cooked oils to be "healthy" or "health-building".
That being said, they are a better choice than many other snack foods! :)

am i better off leaving them out of my diet as a whole or will i still be just as healthy having them every now and then? :)

It says:

We encourage vegans to eat healthy food: we don't want vegans to develop into examples of poor health due to improper nutrition. This does not apply to blue corn chips, which we recommend that you eat anyway, healthy or not, because they are so damned good.

I laughed so hard that I almost choked on my lunch when I read that! Very good! :D
