View Full Version : Cream of Oats Soup

This is so easy - I got it from my Mum. It has to cook for a while, but you can just let it simmer away really gently while you do other things :)

1oz/25g margarine (I used 2tbsp olive oil)
1 onion
2 tbsp oatmeal (or more if you like. I used rolled oats)
2 pints (about a litre) stock
dash of curry powder (to taste)
1 apple
thin slice bread
1 pint "milk" (that's what the recipe said, I used much less. I guess it depends how liquid you like your soup and also how much oatmeal you use)

Put margarine or oil in soup pan. When melted/hot, add oatmeal and onion.
Cook for a few minutes, stirring all the time.
Add the stock, curry powder, apple and bread and cook slowly for about an hour.
Liquidise, return to pan and add "milk" to make a creamy consistency. You may not need all the milk. Bring to the boil and serve as hot as possible.

I'm confused. Is this supposed to be a sweet soup? Or a savoury soup? I never had oats in a non-sweet way and the recipe calls for an apple. But then it asks for stock, onion, and curry powder. :confused:

It's a savoury soup, Tigerlily. You don't taste the apple, I guess it just gives complexity and depth to the flavour. I made it for the first time today and loved it, and you don't taste the apple. I imagine you'd notice if it wasn't there. If you're not convinced you could leave it out, or substitute it with a potato.
