View Full Version : Pumpkin/Walnut/Raisen Spice Bread

Just had to share as this is a wonderfully moist, delicious and fat-free bread!

2 cups whole wheat pastry flour
1/2 cup sugar
1 Tblsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 (15 oz.) can solid-pack pumpkin
1/2 cup water
1/2 cup raisens
1 cup crushed walnuts

Blend dry ingredients; then add rest of ingredients and mix thoroughly.

Bake in lightly oiled small holiday loaf size bread pans for 25 to 30 minutes at 375 degrees.

thanks megs, i'm going to try making this for a friends for a christmas present - she cant digest fat well so she will enjoy this. :)

I wouldn't recomend a cup of crushed walnuts to someone who wants something fat free!

Thanks MegS - that sounds like a very nice, easy recipe :)

What would you reccommend then Mr Flibble?
To use in place of the walnuts, that is?

By fat-free I meant no oil added; but I guess Mr. Flibble is right; technically it is _not_ fatfree! You could just leave the walnuts out, and I'm sure it would still be delicious!!!
