View Full Version : I need a substitute for cream of mushroom soup!

Does anyone know a good sub for cream of mushroom soup? I am in the process of converting most of my old recipes into vegan friendly concoctions and I am stuck on this one. Thanks!

I don't know a substitute, but I have a recipe for cream of mushroom soup:

From Everyday Vegan by Jeani-Rose Atchison


Creamy Mushroom Soup

1 large onion, diced
2 large celery stalks, diced
2 medium potatoes, diced
2 medium carrots, diced
2 c. mushrooms, chopped
2 T. Vogue Vege Base (I assume like a veggie boullion)
2 T. raw sesame butter or tahini
2 T. red miso
Water


Place all veggies in a large pot. Fill with water until water covers veggies. Bring to a boil. Simmer until potatoes are just tender. Add the remaining ingredients. Puree in a blender or processor in batches. Adjust seasonings to taste.



I can't say I've tried it, as I despise mushrooms, but I'm on the lookout for a more creamy and perhaps vegetable-based milk one.

Thanks Artichoke! I think I'll adapt that recipe for basic cream soup and make some cream of potato. Starting to get cold here and hot soup sounds good.
