I don't know how many of you out there read the Guardian...?
I've read it for the best part of 20 years :eek: (since sneaking off to the school library at breaks and reading it there).

Every Saturday in the Weekend magazine, there's usually a recipe or two from Hugh Fearnley Whittingstall which you can make Vegan - last week there was one for Spinach, pine nut and goat's cheese Pie which we adapted by using this vegan cheese we found in Waitrose (you can get better vegan stuff there than morrisons or the co-op).

It was fantastic! :D We made enough for four ... didn't last long though :)

All the dairy replaced with soy of course - it was lovely. We didn't even notice the difference!
From this weeks guardian I made some fantastic cookies. Egg replacement works really well.
