Made this yesterday and it was pretty good. (Rose Elliot adapted the recipe from one by Nadine Abensur)

FRUITS BAKED WITH ORANGE AND GINGER
Serves 8

1 orange
3 eating apples
3 sweet pears, not too ripe.
18 dried apricots
18 dried figs
18 dried prunes, stones removed
200 ml/7 fl oz apple juice (I used orange juice which was fine)
5 cm/2 inch piece of fresh ginger grated.

Heat the oven to 180°C/350°F/Gas Mark 4.
Scrub the orange, then remove some thin strips of peel using a zester or the fine side of the grater. Squeeze the juice out of the orange.
Cut the apples and pears into quarters and remove cores but leave the peel on. Put them into a casserole or baking dish and pour over the orange juice.
Add the apricots, figs and prunes, the apple juice and the grated ginger. Cover with foil or a lid and bake for an hour. Stir in the orange peel and serve hot, warm or cold.

That sounds great! I think I'll use a peach instead of the orange because I'm sensitive to citrus. :)
