1 Solgar MultiVitamin


to School:

16 oz. distilled water, which is refilled once during the School day

1 C. Brown Rice Noodles with 1 T. each Sesame Seeds, Brown Rice Vinegar, Nutritional Yeast and Tahini mixed with 1/2 C. Broccoli, 1 Scallion and 1 Shredded Carrot

3 Raw carob-coconut-pecan-date balls

1 C. Raw Pineapple Chunks

8oz. B-12/ Calcium Fortified Chocolate Soy Milk


after school snack:

8 oz. distilled water

1 Gala Apple w/ 1 T. Raw Almond Butter

2 stalks Celery with 2 T. Raw Cashew Cheeze + 1 T. Udo's Choice Oil

evening meal:

1 large Baked Potato Stuffed with 1/2 C. Vegan Chili (Kidney Beans, Celery,Onions, Carrots, Garlic, Jalapeno, Lime Juice, Tomatoes) and 1 T. Nutritional Yeast

2/3 C. Raw Zucchini "Pasta" (Zucchini, Pine Nuts, Basil, Garlic, Olive Oil & Lemon Juice)



evening snack:

8 oz. B-12/ Calcium Fortified Soy Milk and 2 Wheatabix Cereal Biscuits

before bed:

8 oz. distilled water

I think I'm afraid of being judged by the daycare workers because I'm raising my son vegan

They would be right to judge you for raising your son vegan. That is, if they judge you to be a caring mother that does everything she can to make sure her son only gets the best.
Shouldn't they be the ones worried about you judging them?
I only wish I were as brave as you!

Today Caleb ate:

breakfast- just one banana with some soymilk because we woke up really late and I didn't want to spoil his lunch.

lunch- quesadillas made with flour tortillas, mashed beans, salsa, toffuti sour cream, soy chedder cheese. was offered some fried poleta too, but declined. a piece of yummy homemade chocolate cake with white frosting for dessert. more soymilk.

snack- half a cucumber, sliced, with a little sugar. still more soymilk.

supper- homemade vegetable soup made with veg boullian, braggs, carrot, celery, parsnips, potato. egg-less salad sandwich (one piece of bread folded over) was offered some tempeh nuggets but declined. calcium orange juice. would have had some more chocolate cake but, wasn't allowed because he didn't eat all of his supper. mine was very good :p

snack will be- grapes, roasted peanuts, and maybe something else too.

We usually eat the same thing. My daughter is still nursing constantly throughout the day. I am a Work at Home (WAHM) Mom.

Breakfast
- Oats (soaked overnight with raisins)
-Super foods mixed w/apple juice
Spring water
my daughter nursed

Snack
Puffed rice
Spring Water
my daughter nursed

Lunch
Mango & banana ‘soup’ I ran the fruit through the juicer.
Spring Water
my daughter nursed

Dinner
Homemade Puréed Soup
(Mushrooms, onions, carrots, cumin, miso, spring water. I put the ingredients in the blender after a few minutes on top of the stove.)

Homemade Garlic and Almond sauce
(Roasted garlic, almonds, small amount of pureed soup, cracked black pepper, cumin, and cardamom)
For Dipping
Toasted (sprouted) Ezekiel bread
Raw celery/carrots
Spring water
my daughter nursed and is finally sleeping..but for how long :rolleyes:

I am not sure about the snack later. It might be raisins or a piece of the dessert I made yesterday, Carob coated peanut & raisin clusters.

Wow! I don't know how I missed this thread!

It is fantastic! I'm so embarrased, I'm still on fresh fruit, veggies, nuts, and pasta and plain sauce for my daughter! ( I'm sure she'll survive for a little while ) Geeze, it may not be balanced yet, but compare it to fast food people shove down their throats every day!

Anyway, this thread is fantastic, and will help me, that's for sure.

Breakfast - Mixed fruit smoothie

Lunch - Noodles in vegetable broth w/water taken to school in thermos.

Snack - Apple and Bannana

Dinner - home made vegetable soup in vegetable and tomato broth.

1 C. steamed kale with fresh lemon, Nama Shoyu and garlic olive oil

1 piece sweet onion focaccia with sliced raw green olives, garlic and veganaise

1 rice dream dessert bar (see? I serve her "normal" kid foods too ;))

The Giant ate all of the same; just multiply all but the water by 3 or 4 :)

Snack - clementines - about 4 of the tiny things1

Dinner - Ci'Ci's Pizza - Pineapple with no cheese on top. They really look at us wierd!

Drinks throughout day: I'm trying to fill a water bottle for her and have her finish it at least once / day. She is NOT a good drinker!

I was inspired by some of the ideas i read in this thread, so I thought I'd write a few of the things that my likkle vegans like to eat. We have a slightly trickier situation as my youngest is also intolerant/allergic to soya & wheat.

My boys are 1 & 3

Breakfast: Rice Krispies with rice milk, porridge made with almond milk, rye bread toast with pure sunflower & marmite.....

snacks: raisins, fruit, mini marmite rice cakes (great for little hands), mrs crimbles cakes (dutch apple/ginger/dutch mixed fruit), applesauce cake......

dinner: oaty burgers (go down a treat even with non-vegans!)

I could go on, but i know i've been going on a bit!

1 C. ziti pasta with 1/2 c. basil parsley garlic tomato sauce

1 soy dream iced treat bar

and whatever she ate at my sisters' house after 7 pm!

No, it's just that I have been a Chef for so many years that I can "eyeball" portions easily and when the nutrients really matter in ones diet (like a strict Vegan/growing child) I really like to know what exactly my child is getting. When it comes to oils and the like, it is important to be sure she gets the right amount of each oil and not too much of one kind. (Earth Balance is not really served for "nutrition"- it is something she loves and isn't really a "powerhouse" of nutritional value :))

Also, when I started this thread, I asked that everyone be specific with portions and so I am continuing that. With Vegan children especially, it is of the utmost importance that we as parents are certain about how their nutritional needs are being met. It is important to me that my daughter get enough of all the right nutrients to grow a healthy, strong, Vegan body and such :)

12noon: boob, 4/5 jar of organic sweet pototoes,
6oz organic soy formula

Ben: 7am: boob, almost 7oz organic soy formula
12noon: boob, 2 baby teaspoons org sweet potatoes (he doesn't really like solids yet), almost 7oz org soy formula


They will pretty much do the same at 4pm and 8pm but no more solids, only once a day right now. :D

after school:

1 C. shredded raw beets, carrots and corn w/ 1 clove pressed garlic & 2 T. balsamic olive oil dressing w/1 T. ground flax

8 oz. fresh orange juice


evening meal:

1 C. soy yoghurt w/ 1 T. ground flax, 1/4 c. pecans and 3 T. dried cranberries

2 Hemp Plus Waffles w/ 2 tsp. each Earth Balance Whipped and Maple Syrup

1/2 C. red cabbage slaw (cabbage, carrots, daikon, and a sesame viniagrette)

evening snack:

4 squares organic chocolate

I'm starting to wean the babies so they only get breastfed first thing in the morning and then right before bedtime unless they get up during the night.

Today:

6am: boob
8:30AM: Sarah 7oz organic soy formula
Ben 7 1/2oz org soy formula

12:30PM: Sarah 3 tablepoons of mommy's homemade pureed organic butternut squash + parsnips and 7 1/2oz org soy formula
Ben 2 tablespoons of mommy's homemade pureed organic butternut squash + parsnips (the most solids he's ever eaten :D ) and 8oz org soy formula


Now we're going for a walk so mommy can burn off some of the mock beef stew she made for her and daddy's lunch :) .

:eek: I'm referring to myself in the 3rd person as mommy!!! :eek: I hope that one day, we can find (and afford) a babysitter so we can have some time together as adults. Not that I don't love my kids beyond belief but I'm craving some adult time.

I'm kinda more on the kid side of things, though a much older kid than the ones you guys seem to be talking about. I'm 17 and vegan, and this is what I generally eat:
Breakfast- Apple-cinnamon flatbread with peanut or almond butter and soy milk, or multigrain cheerios with soy milk
Lunch- vegetable (broccoli, cauliflower, carrots) stirfry, and calcium enriched orange juice
Afterschool snack- fruit of some sort (orange, apple, pineapple, etc.)
Dinner- A rice or pasta dish, steamed vegetables, tofu fajita, or vegetable sushi.

Yeah!! My son finally seems to get the hang of solids. He split 1/2 jar of organic sweet potatoes with his sister :) . I think in a few weeks I'll start steaming some of the kale I pick and pureeing it for them.

Anyone know of any potential problems in giving 8 month old babies pureed kale or collards?
