I'm a new vegan looking for a little help.

Can anyone recommend an "easy to cook" vegan cookbook. I' m not much of a cook, so hopefully these recipes must will simple and easy to prepare.

My friend, who's a vegetarian, really likes The PDQ (Pretty Darn Quick) Vegetarian Cookbook. We like cooking together and this book is soooo simple, the ingredients are cheap, and the recipes are delicious!!! We've cooked for omni friends and even they are impressed with how good the meals are!

The book is vegetarian, but many if not most of the recipes are vegan (and labeled as such). A number of the non-vegan ones can be easily veganized (e.g., all you have to do is use soy/rice/almond milk instead of dairy milk or Earth Balance instead of butter).
