Here is the curry I made today:
1 large onion, chopped and fried in olive oil;
1 parsnip, peeled and added to the pot;
1/2 teaspoon garam masala, 1 tespoon of salt, 1 teaspoon cumin powder, small half teaspoon extra hot chilli powder, 1 heaped teaspoon turmeric, half teaspoon ginger powder,
add to pot then add 1 litre water, add 1 tablespoon yellow split peas, 1 tablespoon red lentils, 1 tablespoon puy lentils, cook until all ingredients soft, adding water as required. I will be having this with my neighbour's family, she will provide some rice and persian style salad to go with it.

Please do.
Its easy as all the chopping is the onion, the other veg are frozen.
Frozen veg work well in curries.
If I had remembered I would have put some garlic in too. I have some leftover for today's dinner, amd another portion has gone in the freezer.
Once you know how to do a basic curry you can put whatever you have on hand in. I have not found anything yet which can't be curried.
