This is a great recipe that I got from a thai vegetarian cookbook. I changed it around a bit and tried it out tonight and I loved it. It was really easy to prepare. Enjoy!
- Ingredients -
*1/4 cup vegetable oil, or more as needed
*1 bunch holy basil leaves (about 2 cups) - if you can't find
holy basil use whatever fresh basil you can find.
*1 block of Tofu
*1/4 cup shallots
*3 tbsp finely minced garlic
*3 tbsp finely minced fresh thai chillie (if you can't find
thai chillies just use green chillies)
*1 large red bellpepper, long thin slices
*2 tablespoons sugar, or more to taste
*2 tbsp light soy sauce
*2 tablespoons vegan stir fry sauce (just check the classical
stir fry sauces at your grocery store - I found one)
*1 tbsp vegetable stock
- Directions -
Heat the oil in a wok over medium heat. When hot, add half of
the basil leaves (reserving other half) and fry 2-4 minutes or
until crispy. Remove from oil and drain on paper towels. Set
aside for garnish.
With the same oil, fry the tofu for 3-5 minutes until light
brown. Remove from pan and drain on paper towels.
heat a little oil in same wok over high heat. Toss in red
bell pepper and stir fry 3-5 minutes. Stir in the shallots,
garlic, and chillies. Cook 3-5 minutes or until fragrant.
Add the tofu, sugar, light soy sauce, stir-fry sauce, and
vegetable stock. Stir fry for 3-5 minutes longer until well
mixed.
Stir in remaining fresh basil leaves. Transfer to a platter,
garnish with fried basil, serve with rice.
