I bought a quarter of one as I was rather hoping it would make for a more colourful coleslaw. I am assuming it is ok to eat raw?

I make it into a nice coleslaw with sliced apples, red onions and dried cranberries dressed with olive oil and red wine vinegar. Yummy :)

I quite like it in a stir fry but I like to lightly steam it a bit before stir-frying it.

I use red cabbage for cole slaw with Vegenaise, red wine vinegar and raisins. Easy peasy and yummy!:)

Throw it at animal hunters, no sorry none of that I will get slapped ;)
Slice it fine, then slice fine some onion, then grate carrot, add a little lemon, a good splodge of vegan yoghurt a good splodge or vegan mayo = lush vegan colslaw. I love it in a nice west country spud (baked) :D

I make borsch (beetroot and cabbage soup type dish). A Russian friend of mine taught me how to make a veganised version which is very healthy and tasty. Especially nice with vegan sour cream :)

I like finely sliced red cabbage as part of a salad.

A few more ideas to be going on with...

I put it raw in a bean pate - gives an extra bit of crunch and texture.
Otherwise, I just steam it (very slightly) and serve with vegan haggis + gravy.

I do the same thing but without raisins, cinnamon and cloves. This is good hot, warm or cold, especially if you don't overdo it on the vinegar. I use cider vinegar.

Slow cook it in the oven or on the hob with sultanas, a bit of stock, a healthy splash of red wine and some sugar... it comes out almost caramelised and really soft and scrummy.

Or with apples and cinnamon.
