I bought some millet the other day because I wanted to make millet burgers, and it was so bitter it was inedible. And I'll eat almost anything... ;)
Has anyone else had this experience? The first time I just put it in the boiling water without rinsing, then I thought maybe it had a kind of layer that had to be rinsed off, like quinoa, so I rinsed it loads of times and made another batch, but that made no difference.

Also I found that it went very "soupy", as if lots of starch cooked out of it. Any way to avoid this?

Try dry frying it for about 5 minutes until it starts to smell toasted, rinse then boil it with some stock.
