I've just made this for the first time and it's DELISH!! .........
Cook some green beans to your liking and refresh.
Peel, seed and chop a couple of tomatoes .
Saute the following in a little margarine or olive oil until they are softened;
a small chopped onion
a small handful of chopped or flaked almonds
a small handful of sultanas or raisins
Mix everything together, along with a splash of olive oil and a dash of wine or cider vinegar.
You are supposed to chill it.... but I just couldn't wait! I had it with steamed broccoli and creamy garlic sauce. It would also be great to take to work for lunch.
