View Full Version : Armenian Lentil Apricot Soup

1 1/2-2 Cups Lentils, dried
Water to soak plus an additional 3 cups Water
1-1/2 Cups Onions, sliced
1 Cup Apricots, dried, chopped (I usually add more)
1 Bell Pepper, chopped (any color...I use red)
6 large Tomatoes
2 or 3 Parsley Sprigs, chopped
1 Tsp. Mint, Fresh or Dried (I like fresh:))
¼ Tsp. Allspice, ground
¼ Tsp. Cinnamon, ground
¼ Tsp. Cayenne or Hot Red Pepper (adjust to taste)
1 Tbsp. Paprika

I like to soak my lentils overnight, rinse them, then throw them into my slow cooker for about 2-3 hours.

Take the lentils out of the crock-pot. Drain excess water, place them in a large pot add about 3 cups of water. Place tomatoes in a food processor...I reccomend leaving them a bit chunky. Add the tomatoes to the pot. Turn the heat on medium.

While the lentils are cooking you should chop your onion, apricots, bell pepper parsley and mint. Add each ingredient individually as you finish chopping it.

Add the Allspice, Cinnamon, Cayenne, and Paprika to the pot.

Cook on medium heat for approx 20 min. (stir occasionally)

Turn off heat and allow to cool a bit....then devour!!!!


It aslo tastes great luke-warm and cold!!

Note: For some of you it may be easier to use canned tomatoes, but I wouldn't reccomend it.

sounds different! - what colour lentils are you using?

It is....It's my favorite soup!! I used regular whole lentils (green.) I've never used any other color, do they very in taste?? I'm sure you could even mix it up and use a few different of colors.

Different lentils cook differently. Red lentils, for example, will turn to mush in a soup (not necessarily a bad thing).

Do you peel the tomatoes?

Thanks Tighrlily.....I wasn't aware that some people peeled tomatoes....so no I don't. :)

:D OOOoooohhhh boy, you're in for a very pleasant surprise. You should check out all the different Indian Lentil dishes. They have soooo many kinds, and do so many different things with them, it's amazing!!!

Lentils, take seasoning incredibly well. There are an endless number of flavor combinations using spices and lentils. Any Vegan who doesn't know about these little gems is really missing out.

One of my favorite dishes is one where green moong beans are sprouted for a day before cooking. Then they are mixed with Lime juice, Cilantro, Soy Yogurt, and Coconut shavings! (...I'll post it when I next have the recipe.) The Lentils take on a fresh crunch that is really great!
