Banana-Bran Muffins
dry ingredients
1 1/2 cup whole wheat flour
1 cup bran
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped apricots (we use dried apricots)
1/3 cup chopped walnuts (optional)
wet ingredients
2 mashed ripe bananas
1/3 cup + 1 tbsp oil
1 cup unsweetened applesause (or, for freshness you can just squish up some pears into an applesauce state of being...also very tasty)
1/3 cup molasses
Mix dry ingredients into wet ingredients until just combined.
Spoon into a muffin tray; bake at 400 degrees Farenheit for 20-25 minutes.
Makes 12 Muffins
Sometimes I like to throw in some cranberries as well! ENJOY! :)
