View Full Version : Chocolate Chip & Walnut Cookies Recipe

This recipe has been made many times over and the cookies never last very long. :o


1 cup "butter" (I use Pure Soya) at room temperature
3/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
Egg replacer equivalent to 2 eggs
2tsp vanilla extract
3 cups plain flour
1tsp baking soda
1/4 tsp salt
1&1/2 cups chocolate chips (I use supercook plain chocolate chips)
1 cup chopped walnutes (optional)

Preheat oven to 350F.

Cream the "butter". Add the white and brown sugars and beat until fluffy.
Beat in egg replacer. Add the vanilla extract and beat until incorporated. I am quite lazy and usually do this part in a mixer. (I think it is important to note though, that I wouldn't mix the final flour mixture in the mixer, because I nearly burned out the mixer's motor doing that. :eek::o)

In a separate bowl, combine the flour, baking soda and salt.
Add the dry ingredients to the liquid mixture and beat until incorporated, adding the chocolate chips and nuts about half way through mixing.

If you find the dough very soft, cover and refrigerate for about 30 minutes until firm.

Bake for about 15 minutes or until golden brown around the edges.

Then sit and stuff the lot in one go. :D
