I'm always up for trying new things and today found some fermented tofu in a chinese supermarket. It's in a jar and looks terrible (almost black). The top of the lid is bulging and Cherry wondered whether the seal was broken and it had gone moldy. You can even smell it with it completely closed up.
Apparently this is quite normal. Reading up however there seem to be lots of references about it being made with things like fish brine. The ingredients on the bottle are all vegan (hence the reason I got it), but now maybe I'm slightly paranoid.
Is there anyone who buys this stuff regularly and can vouch for modern manufacturing techniques of it not involving rotting flesh?

Well I looked on a few websites and it says there are a lot of ways to ferment tofu, and the most popular way is to use wine, and not the brine method, which doesn't contain fish, just salts.
If I'm wrong, I'm sorry, but I figure you already bought it so it's not like eating it will make anything worse.

mr flibble...as your post is dated august 2007..can you please let us know whether eating the potentially moudly black fetid fermented tofu killed you? :p

I made some tempeh, which is fermented soya beans. I sent off for a free sample tempeh starter and they said that if it goes black you could still eat it! Ours didn't and it was pretty good. I'll definitely make some more.

Tempeh is quite normal in comparison (thou i wasn't a great fan when I tried it). The moldy fish smelling jar went in the bin I'm affriad. Normally I'd empty the contents and recycle the glass, but in this instance I just couldn't bring myself to having the whole house stinking for days.

Tempeh is quite normal in comparison (thou i wasn't a great fan when I tried it).
I couldn't handle more than two bites of tempeh when I had it. Ugh.

Haven't given the stinky tofu another try, eh, Mr. Flibble? Shouldn't be bulging lid or too dark, just slimy. My opened jar does darken to light-pencil-graphite on the air exposed top layer only.
Not surprised they sold you rubbish; Chinese have no qualms screwing people over hence all the food scares.
About the tempe: thinly slices, pan fried til crisp then marinated in dark soy sauce. That's how I liked it in Indonesia. Raw makes me gag.

As far as business is concerned 'let the buyer beware' is the cultural norm.
That's why becoming a regular valued customer who will introduce more customers is vital. Then it is a matter of face if the vendor disappoints and losing face is to be avoided at all cost.
Just because I generalized a contrast to our culture why should you automatically generate a negative value judgment? What kind of label does that attract?
Anyway, I find media statements regarding animals such as 'Chinese cruelty' to be highly bigoted. Yes, there are shocking cases here but I don't (thru my network) find it any worse than Western countries.
Back to Stinky Tofu: there is a cube in my carrot-cake icing for that little zing to cut the sweetness
