and I love that beautiful plate of tofu and mushrooms... but isn't it a bit dry on its own?

No, it wasn't dry at all.
I didn't drain the tofu, so it was fried on the outside, but it wasnt dry.
And i also had a good cup of soymilk with that.

I expected like something quite big but it's tiny.
I thought it was very small too. There is a link at the bottom of that page to a 10cm (quarter pounder) version. I might get that one!

@cedarblue: There's not really a recipe to that, though I found that the one in Vegan Planet is very close to the way I do it (I should sue them for stealing it from my mind!).

Just sauté a chopped onion and two cloves of garlic in olive oil, add some chopped, fresh rosemary, 500 ml of polpa di pomodoro, about a cup vegetable broth and add cooked white beans (or drained, tinned ones- I prefer Italian cannelini ones but any other white bean will do, as well).
Bring to a boil, add two handful of your favourite small pasta (I use ditali rigati), lower heat and let simmer until the pasta is done.
Spice up with salt, pepper and any herbs that are hanging out in your kitchen/garden.

Serve with more olive oil and balsamic vinegar on top.
It's also good the next day, when it has turned more into a pasta dish than a stew.

I made a pizza with pumpkin puree for the sauce, pieces of baby portabella mushrooms, zucchini, yellow squash, spinach, black olives, and some vegan cheese. on my homemade wheat pizza dough.
