Raw Zucchini pasta w/ pine nut cashew pesto, topped w/ avo & tomato

This is the pesto recipe (http://www.aniphyo.com/2008/08/25/pistachio-pesto-with-kelp-noodles/), only I had no pistachios so I used pine nuts & cashews. It was yummo!

I've always wondered how to make this! Looks amazing... will have to try it now! :thumbsup:

Ta! I don't have a spiral-noodley making thingo so I had to cut the zucchini into strips by hand, haha. Took a bit of time but it was fun chopping it all up and processing the pesto etc

^ No offence meant, just that some people have very strange ideas about what vegan means and usually people put the type of faux meat they're using.

I use a potato peeler to cut courgette in to strips like papardelle, works pretty well

Thanks! I read that afterwards, so I might try that so I don't need to buy a spiral making thingo :)

Yep, they make the PC ones too. Except they sell for a couple of dollars less with the PC labelling on them! I used those same chicken strips in a salad tonight.

they were surprisingly good. I usually don't like things like that but I had them on the pizza and they were really delish!!

Someone thinking chicken and bacon are vegan? If this person exists they need some serious sense knocked into them.

Kitteh and Squig... I dont have a spiral cutter or a food processor! Suppose I could go get them... I'm way terrible at cooking/ preparing food. Maybe a processor would help! :cool:

Well you don't need a food processor but they make everything so much easier! Otherwise you'll spend a lot of time cutting everything up v.small and mixing well for sauces. You don't need a spiral maker as I used a veggie peeler the second night and it made nice ribbons!

This is the zucchini pasta made with the veggie peeler and some of the pesto blended with a tomato & water
