You can eat it raw, it's used as noodles/pasta.

I went to a veggie cafe called Iku, I had the lime bean, leek and corn casserole, served with brown rice plus some bancha tea

We forgot to take pics of food when on holiday until we had all but eaten it.
So this is not all we ate, just what we happened to remember.

Chinese, we went for a tofu heavy dinner as it is really rare to find tofu dishes near us. Most of it was great. The plain tofu was vile.

A shared Mediterranean tapas from a lovely cafe that we ate in three times whilst away. It was on the harbour side and was cheap and tasty. Had a medley of breads, oils, olives, garlic cloves, sun dried tomatoes and humus

Chinese take away. Again tofu heavy. There was MOCK DUCK, with pancakes veg and plum sauce. There was so much we had the leftovers for dinner the next night. Yelow bean cashew tofu, Thai tofu, veg spring rolls, boiled rice.

Found these in Truro's Archie Brown's cafe/ shop. Can't remember what they are called. Helen is napping on the sofa and I don't want to wake her up. She will edit this later with the real name and the big deal :D




The next one is the restaurant that the first picture's meal came from. I included it to show how interior decoration has not yet reached Chinese restaurants in Penzance. Major clash!

I finally got round to making a coconut/lime/tofu and avacado cheesecake yesterday, had been collecting the ingredients for ages as nowhere round here had creamed coconut:rolleyes: anyway was worth the wait - rather yummy!

Dinner tonight:
Gingered grated carrot
Raw Spinach with Raspberry balsamic vinegar
Chilled Quinoa cooked in Pomegranate juice with sweetcorn, pea and red onion
Sweet potato and ground mixed seed rissole's
Mediterranean bread with olive oil and Balsamic vinegar drizzled over
Pitted olives with Lemon pepper

Made all but the bread myself and was really nice until i found a hair in it and prompty threw up (it is a weird psychological thing my Mum, me and sister all do).

Quinoa Salad I made this afternoon.
Ingredients consist of: quinoa, cherry tomatoes, black beans, cucumbers, carrots, scallions, oil and vinegar
I got the recipe in an email this week from VegWeb :)

I found this recipe on vegweb and made it after seeing these pics. I added a little soy sauce as I thought it was a tad bland, but overall I liked it. I love my quinoa!
