made this today from leftover sietan chunks (made by dave for the BBQ)
it's a sietan, veg terryaki sir fry with saffron and spinach rice.
really dam tasty

Dinner round at Brad's then! Never had Seitan....*rushes to shop to get a bottle of wine* :D

Looks much nicer than the name implies.....does it taste like Tofu?

not really, chewier texture and tastes more along the line of pork and in this case terryaki marinade as well as the satay it had origionally been marinated in

Sounds better than Tofu. Is there any way I can over cook it and make it chewier and unedible? Or is it pretty standard stuff? :smile:

it can be overcooked, easily
it's also damned difficult to buy or simple to make from scrath but requiring a huge amount of effort

I took a beauty shot of some mac & cheese I made yesterday. No one else I live with will eat nutritional yeast, so my leftovers are forced into photo sessions. Organic pasta with a cheese sauce that's mostly made up of vegetable broth, n. yeast, and some flour.

Yes, thank you! It was a last minute scramble when I realized a main ingredient in the mustard sauce I'd planned on making expired 3 months prior. The spread might be better fit for dipping cold veggies in instead of between buns, but oh well.

True that!

I've only ever seen it on one health food store.

If you buy 'Wheat Gluten' or 'Gluten Powder' online from somewhere like Flourbin (I've bought from here) or lowcarbstore than it's not that hard to make, especally if you have either a breadmaker or a mixer with a dough hook.

If I'm making from scratch using bread flour, I put about 2 cups of white bread flour to 2 cups of wholemeal flour and 2 cups of water in my breadmaker and knead for about 5-10 mins. You can do this by hand if you want. Then let it rests for 30 mins to let the gluten strands form.

After this its a case of kneading it in cold water follows by warm water, each time pouring the rinse water away (or keeping for flushing the toilet, watering plants, making stock or whatever).

You know it's been 'washed' enough when the water is pretty much clear after each rinse. Finish with a cold rinse in order for the dough to tighten up.

This will look like a very small blob by now. Don't worry, when you cook it it puffs right up and makes loads more!

Most people simmer their seitan in a broth of their choosing, I tend to use a fake chicken one. You can find loads of recipes on line. This simmering takes about an hour with a very low simmer, until all the juice has evaporated of been soaked up into your dough.

You can now eat it in whatever way you like.

As you can see, it's a lot of effort from scratch, but I suggest trying it once, and then seeing it you like it, then if you do, mail order buying some gluten powder from flourbin.co.uk and using that to make it, and that just requires a few mins of kneading, and then the simmering, but that doesn't require a whole load of effort really.

You've got to prepare nearly 1 1/3 cup mashed potatoes prior to these tasks:
-Heat 1 cup water & 1 cup soymilk on stove over med. heat
-Add 2 tbsp. nondairy butter, wait until thoroughly heated to remove from stove and let rest
-Add 1 package of active yeast to 1/2 cup water and wait until foam forms
-In the meantime, combine roughly 5 cups flour(but you might need closer to 6), 2tbsp b. sugar, and a couple pinches of salt in a mixing bowl.
-Combine everything (mashed potatoes, soy/water, and the yeast/water) to the flour bowl. Adjust level of flour or water to obtain a soft dough consistency.

After all that, just let it rise for as long as it needs. Knead and shape into standard bun-sized globs and bake until they begin to lightly brown.

We decided to have bake sales on a more regular basis after participating in the Worldwide Vegan Bake Sale. We held out first last Saturday and raised $1152.75 for NSW Animal Rescue!
