tonight was blackbean burgers w/sauteed and peppered mushrooms and onions along with tomatos and the other usual stuff and a sweet BBQ sauce (w/maple syrup as the replacer for honey).

this was my first shot at making these - so for my wife to say they were the best she'd ever eaten was quite a compliment.





...i would imagine she was saying that out of marital obligation though :)

2 teaspoons baking powder
Half-teaspoon bicarbonate soda
2 tablespoons cocoa
175g caster sugar
150g chocolate chips (plus more for sprinkling later) - I use big chunks
250ml milk
90ml vegetable oil
1 tsp egg replacer or 1 mashed egg (I did half and half
1 teaspoon vanilla extract


http://www.nigella.com/images/transparent.gifhttp://www.nigella.com/images/transparent.gifPreheat the oven to 200C and fill a 12-bun muffin tray with paper cases.

Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug.

Mix both together – it will be a runny batter - then spoon into waiting muffin cases.

Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy.

Makes 12 (or lots more if you use small cases)

Spaghetti with olive oil, red chilli, black olives, pine nuts and parsley. I just can't stop eating this stuff!

I've just made some tangy mincemeat for pies ... with cranberries, tropical fruit, nuts and booze.

Let's see how long I last before making mincepies .. . the sooner I make them, the sooner they get scoffed!

It's nothing fancy like some of the stuff on here but basil and herb soaked, fried tofu slices on alfra and brocoli sprouts with mayola and burger relish was soooooooooooooo amazingly good!

Emzy, those meals looks ace. And nice cookies, Pavotrouge!

Here's what I did with my Sunday...

Burger buns, made the old fashioned way.

They took FOREVER to rise all three times. Next time, bread machine dough it is. They ripped apart really nicely though.

Next I attempted the VWAV veggie burgers. I say "attempted" because they didn't turn out so well. First try at frying them:

Yeah, that was gross. I think my mixture was too wet? Anywho, the oven was already on, so I baked the rest:

Still mushy, but edible at least. I just pretended it was a sloppy joe. With VWAV sweet potato fries:

Split pea soup. So ridiculously easy, and so good.

Well, here's my Yule lunch .... Pecan and cranberry roast, roasted parsnips and potatoes with onion and cherry tomatores, sprouts (hubbie loves 'em), slow cooked red cabbage in red wine, cranberry sauce, bread sauce and gravy....

Chestnut, mushroom and red wine pate en croute main, we had with roast pots, parsnips, onion gravy and veggies plus stuffing.
