My phone's camera managed to suck out all of the colour, but it was good, I swear.
Stuffed mushrooms (soy mince / onions / tomatoes), roast potatoes, and mange tout (sp?) - though I had already eaten some hahah.
My nan cooked it, as she is a legend.

I'm going to have a go at making those peanut butter bar things from a couple pages back tomorrow..we'll just have to see how that goes.

oooh whats the uncheese made from?

It's a version of the colby block cheeze from uncheese cookbook, it's got roasted red peppers, cashews, tahini, spices, agar agar, other stuff.

Pictire is abit bright but it's wholemeal pasta, french dressing, courgettes, pinenuts and fresh tomatoes - dressed with parsley!

I don't think I've had "meatballs" since I was vegetarian. Probably because you can't buy pre-made ones here easily. I've got some of that burger mix in the cupboard so I'll get some going in the next few days.

asda do frozen meatballs, will check if they are vegan - my family eat them and love them.

I made mine from rehydrated TVP, onion, garlic, flavourings, etc. Wouldn't have them again though as they were far too "meaty" for my taste .. they were pretty dense.

I made these for the first time today yum - I had never heard of ackee till I became vegan - so much for "what do you eat", eh? Answer loadsa stuff omnis have never even heard of!

Ackee quiche! - I will have one of these this evening with a huge salad but they would go just as well with mash and beans and I think would be yummy with brown sauce or tomato ketchup. The original recipe is for one large quiche but I didn't have the right size quiche pan so I made 4 littlies!

My friend raves about ackee, her family are West Indian and I think it's quite a common dish there.
It looks lovely, but what does it actually taste of?

Ackee is a west indian favourite it looks and feels like egg yolks and even tastes a bit eggy strange but I think this is why it works so well in quiche!:D
