Okay so I didn't have time to get the tofu salad recipe together, but I DID have time to make "tuna" noodle casserole for dinner. OH MY GOD, it was so good I had to have seconds, and I never have seconds.

I ate almost a quarter of the pan. The recipe is on vegweb.com, it's called "tuna" mushroom casserole. I made quite a few modifications. If anyone wants 'em just ask!

Emzy and Flying Plum, here's the eggless salad.

Mix together:
1 cup (1/2 lb) firm tofu, mashed
2 green onions, finely chopped
1 Tbs vegan mayo
2 Tbs pickle relish
1 tsp stone ground mustard
1/4 tsp cumin
1/4 tsp turmeric
1/4 tsp garlic powder or granules

From there I add minced celery or shredded carrot or sesame seeds or what have you. Red onion subbed for the green is good too.

It's seriously so good. Good cold for lunch today too. If you make it I recommend adding some stuff to the sauce - black pepper, nutritional yeast (1/4 c), frozen peas & carrots (thawed), nori shreds (1 Tbs-ish). Also my roux didn't quite work, so I added a Tbs cornstarch to the last half cup of soy milk I added and that did the trick. Also, in the name of deliciouness I tried using the potato chip crumbs, but in the name of non-greasiness I have to say they didn't really add anything. And I subbed bread crumbs for the french fried onions. Good luck!

although i didn't bother with eggless & cornstarch coating for frying the tofu, i just fried it off quickly plain till crispy.

ha yeah i know. there was also vegan coconut creme cake, carrot cake, and pumpkin pie !!! i was overwhelmed, in the best of ways.
