oh bless the crippled bunny, that's the one i would have! :D

they look nice - it's just the pastry for the cross i couldn't be bothered to make, and that is pretty crucial to the easter theme after all!

..or is it just extra bun dough on top?

You can't buy wholemeal pizza dough where I live - you have to make it which means EFFORT!!!! :D

I never buy pizza dough, yet I don't feel it's a lot of effort to put into making it... you can make it the evening before and let it rise in the fridge overnight.

it's easy emz! wholewheat flour, mix with yeast, sugar, salt, water, dried herbs if you like. mix to form a dough. if you like let it rise a bit in airing cupboard but it's not necessary. roll it out, load it up - pizza in 1/2hr!! :)

Ok I'll give it a try - I'm looking for something easy that can be eaten cold to make for a free food stall that the North Herts veg/vegan group are gonna do Cedar. So if it works I'll make mini ones en masse!!! I'll have a go tonight me thinks.

Glad your hot cross buns worked Poison Ivy :) I ate most of mine microwaved for 20 seconds so they were softer.

i was craving calzones a few weeks ago, but too lazy to make dough so i stuffed vege style pepperoni, bacon and ham, some raw peppers and onions and like a quarter bar of shredded follow your heart jack cheese into whole wheat pita halves, wrapped them in foiled and baked them for awhile. they turned out really well! dipped them in marinara.

jambox- what did u think of the jerk tempeh? i was thinking about trying to make it.

Rolls

3/4 cup soymilk
2 tsp yeast
2 cups flour
1/4 cup sugar
2 Tblsp Cocoa
2 tsp cinnamon
1/4tsp salt
4 Tblsp margarine

Heat soymilk until warm, sprinkle with yeast stir and set aside. Combine flour, sugar, 1/2 tsp cinnamon, cocoa and salt. Rub in margarine until breadcrumby - add soymilk, mix then knead and leave to rise (about 40 minutes)

Cinnamon filling

1/3 cup brown sugar
rest of cinnamon
1 Tblsp marg
1 Tblsp flour
about 75g plain choc, grated

Combine brown sugar, cinnamon and flour, rub in margarine then add in grated choc and give it a good mix.

Roll dough out into a rectangle, about 15 x 12 inches. Sprinkle chocolate mixture over dough. Roll up and cut into slices. Put slices in greased tin and leave to rise for about 1/2 an hour. Bake at gas mark 5 for about 20-25 minutes.

Glaze

icing sugar
soymilk
vanilla essence
1/2 bar Organica White Chocolate (optional)

Make a thickish glace icing using icing sugar, soymilk and vanilla. I melted half a bar of the organica white choc and added that into it as I wanted a chocolatey glaze and drizzle abundently over rolls.

Yep, that's pretty much it. If you have time, I think the longer you let it rise the better, but 15 min was enough for me. Here's what I did specifically.

Quick Calzones

Makes 2.

1 tsp active dry yeast
½ cup warm water
1 tsp kosher salt
1 Tbs olive oil
½ cup whole wheat flour
½ cup bread flour
fillings

In a medium bowl dissolve yeast in the warm water and let stand for 5 minutes. Stir in the salt, olive oil and flour. Add more flour as needed to form a workable dough and knead a couple minutes. Place dough in an oiled bowl, turn to coat, cover and let stand for 15 minutes, during which the dough should rise a bit. Preheat oven to 400 F. Divide dough into 2 portions. Using a rolling pin and extra flour, roll each portion to about 1/8 inch. The dough should be double the desired calzone size. Layer fillings on half of each piece of dough, leaving a half inch around the edges to seal. Fold dough over onto toppings and crimp edges. Bake on a parchment lined baking sheet for 15 minutes.
