i know it all just looks like depressing brown glop..but i made *interesting* rice and lentils. usually i just boil up brown basmati and boil up lentils with a few spices in..but this is like a proper recipe and that..and it made a whole difference tastewise!

coconuty cashew um brown basmati rice + sweet lentil uhm..glop

and the pic doesn't make it look that great, but raspberries, halva and alpro soya cream..

Just imagine it now - gravy and ketchup on salad, rice on bread, pasta with its sauce running onto the vegetables.

The picture doesn't do it justice - it was very good. Toasted wholegrain bagel with yeast extract + veggies.

I was really in the mood to cook and bake this weekend, so I started w/ tacos on Friday night. I cooked up some mixed beans w/ salsa & onion, stuffed some taco shells and topped them w/ avo mashed w/ lemon juice. I served the rest of the bean mix on some lettuce.

Then I wanted to bake the Lemony Blueberries muffins that are from this blog: http://veglicious.blogspot.com/2008/04/blueberry-lemon-muffins.html
I sub'd spelt flour for pastry flour and used rice milk instead of soy. These were delicious! The crumbly topping was sweet and crunchy.

On Saturday night I decided to make the Hunan Fried Recipe from the Vegan Fire and Spice book, recipe found here: http://www.amazon.com/gp/blog/post/PLNK3OZ4HQUKOUW40

I used a small chilli instead of cayenne and used quinoa instead of rice. It was yummo, just had somemore for tonight's dinner

Last night, omni bf wanted to try making honey jumbles, they're like a honey-gingery biscuit, so he googled some recipes and found the Gingerbread Cut Out Cookie recipe on the PPK for us to make instead: http://www.theppk.com/recipes/dbrecipes/index.php?RecipeID=196

I used spelt flour and maple syrup instead of molasses as I had none. They turned out a bit paler than gingerbread and were quite soft. I iced them w/ plain and strawberry icing mixture.

Today I made the tortilla chips that were posted here: http://www.postpunkkitchen.com/forum/viewtopic.php?id=56415
I topped them w/ the same bean mix I used on my tacos, put a tofutti cheese slice on top and grilled it, then added some avocado

I made a savoury pie. It was stuffed with fake beef, leeks, spinach, parsley and parsnip in a thick creamy sauce. I gave them out at the demo I was at on saturday. Everyone loved them! Way hey my first pie attempt!

they were rly nice out the oven..but not so great cold.
i mixed teh sosmix with sage and onion stuffing pavotrouge, and some sauteed red onion and grated field mushrooms. i wouldn't recommend using sosmix on its own. it's hideously pink and salty :bigsmile2:...mix it with some other stuff first..for the love of all things tasty!!!
