Last night I really felt like sushi take-out, but the one place that has 5 kinds of vegan sushi doesn't do take-out, the place that does take-out doesn't have vegan sushi, I can't afford to eat out in the first place, and I don't like take-out because of the styrofoam.

So I made this:

sushi with what we had at the time (carrot, zucchini, bell pepper, avocado, brown rice) miso soup with rice noodles, red raspbery tea for me, and elderberry tea for him. YUM!!

Leek and Bean Cassoulet with Biscuits (V-con). Highly recommended! One of my new favorite dishes.

Awesome! It took about an hour to make. The stew part is cooked pretty much completely on the stove and just needs 15 minutes in the oven once topped with the biscuits. I loved the balance of savory flavors and tenderness of the vegetables. The biscuits are light and fluffy baked on top of the stew. I think this would be a wonderfully nourishing fall-time or Thanksgiving dish. I hope you enjoy it as much as I did!

These pictures are ridiculous!

I love them.

Sinarei's pictures are so wonderful that I almost can't comprehend them. And SnivelingChild, just seeing that picture with the sushi and Netflix and the dog and what looks like a kitty's behind sticking out from under the table really made me want to be there.

(sniffle) I love The Vegan Forum.

Everything looks delicious! VeggieMaya, the curry tofu salad sounds really tasty, especially for a "thrown together' type thing. Pavotrouge, your curry looks great, I am wanting to get that cookbook. Aradia's pizza, and everything Sinarei makes. And homemade sushi! I need to not go away for the weekend and not check this thread, it's overwhelming to come back. I'll post some from the weekend laters.

thanks, Jambox! although, i have seen some of your dishes and mine doesn't even come close! but yeah, the salad was really easy too. i am definitely going to make it again. maybe next time i will use some different ingredients to change it up. any suggestions?

Here's my dinner tonight. Courgette (from my garden) stuffed with sauteed onion and garlic with raisins and pine nuts and TVP (that had been soaked in garlic, chilli, wine and stock) , then roasted. And crushed potatoes and tomatoes (both from my garden).

Cheap, fast and scrummy.

ok, Jambox..I have to ask....what do boiled peanuts taste like?? i haven't heard of that before.

It's a very southern thing, around here you can get them at gas stations and roadside stands. I'd never made them before. A friend showed up with a bag of peanuts and when asked how to boil them she said "add a shit ton of salt and boil them for about an hour". They get soft and taste salty and delicious. I'm not sure there's really a way to describe the flavor since most people haven't had cooked peanuts. Try it!

If only! I would eat entire veggie burgers in one bite. I had to attack that one alternatively from the top and the bottom.

Yep, they are very good grilled. I cooked them fully on the stove beforehand though, so the grilling was mostly to reheat them. They hold together great. I definitely recommend the recipe but be sure to eat them within a few days or freeze the extra, the texture gets a bit wonky after a couple days in the fridge.
