steevs birthday is coming up and im going to make him a vegan chocolate cake with chocolate icing. when we serve it, were going to put some cut up fruit, a couple scoops of soy ice cream, some crumbled cookies, and he wants a sweet coconut flavoured sauce (i guess the thickness would be between sauce and icing, so we can drizzle it) drizzled over the cake, and then dried coconut sprinkled on top.

so i was wondering if anyone has a recipe for a sauce or icing like this.

I would use coconut milk, add some icing sugar and some dessicated coconut.

I have used this

1/2 cup creamed coconut
1 1/2 cups coconut milk
2 tablespoons sugar
1 tablespoon cornstarch mixed into 3 additional tablespoons of coconut milk

Bring the coconut cream and coconut milk to a boil in a saucepan.
Stir in the sugar first then add the cornstarch and coconut milk to the saucepan. Stir the mixture quickly and it should thicken.

You can also make it by just dissolving 2 tablespoons of sugar into a can of coconut milk if you want a thinner sauce.

Coconut cream is very similar to coconut milk but contains less water. The difference is mainly consistency. It has a thicker, more paste-like consistency, while coconut milk is generally a liquid.

You can get it from goodness direct or in the asian section at supermarkets or some health stores.

I normally get Blue Dragon brand.
