Its a shame they us vital wheat gluten so much... I haven't found it in Denmark yet..

So I tried the chickpea cutlets last night, they were way to yummy....mmmm, it was the first time I have ever tried a recipe or anything with vital wheat gluten, as i have never tried seitan before. it was interesting and yummy to say the least.

The food is just too yummy!... I made the choc-chip and walnut cookies last night and i've eaten way too many today :(

Uh ive just made those today... they are good.. but ive would have prefered them more crispy.. maby I should try to bake them a little longer

I think this book is making me gain weight! lol I ate the majority of cutlets and my bf only had one, I was like "where did they all go?" oh I ate them....hehe...

I was only able to find it at my health store. bit pricey though.

We had the portabello mushroom salad last night. It was AMAZINGLY good. The dressing needs a better name, cuz Spicy mustard dressing does not do it justice.

Also had tofu florentine last night, on spelt rolls. Again, AMAZINGLY good.

They kicked the black bean burgers butt.
I will be thinking about them all day today. :)

I made the gumbo tonight. Sort of- I used TVP chunks instead of kidney beans because I can't stand them at the moment (usually I love them) and left out the beer because I'm all alcohol-free at the moment.

Turned out awesome, not only because okra is my favourite veggie in the world.

With regards to the vital wheat gluten....is it possible to make it yourself? I went to a Chinese restaurant last night that uses vital wheat gluten in it's faux meat dishes. They make it in house....so maybe it's not that hard?

I have heard you can make it, i don't know how, but I have heard its kinda difficult.

Roxy, you can separate the gluten from flour to make your own seitan,(which is basically reconstituted gluten) but I'm not sure if that's what you mean. As for regular vital wheat gluten, I'm surprised it is not readily available everywhere. Here I buy it in bulk for under $2.00 a pound and that makes a ton of seitan or chickpea cutlets or whatever. Mail order might be a worthwhile option.

Hmmm. It's not nearly that pricy here in Toronto - I wonder what the deal is. Did you buy it in a bulk store or in a health food store?

I bought some directly from a mill and it cost 8.65 for 2lbs (about $17 usd).

It's rare in this country, and thus expensive.
