View Full Version : Recipe Help! sugar-free, vegan, pumpkin, oatmeal cookies?

Does anyone know of, get ready for this: sugar-free, vegan, pumpkin, oatmeal cookies? I could do without oatmeal, but the rest has to stay.

I found this recipe:

The only problem is the sugar, so I thought I could substitute molasses for sugar, but I am unsure if this would work since so much sugar is required for the recipe and a small amount of molasses is already needed.

If no one has any ideas I will experiment and pass out my recipe.

I think applesauce is often used to sweeten reduced sugar baking. I wouldn't use too much molasses because it has such a strong flavour. How about using Stevia or Xylitol or something like that? What is the reason it has to be sugar free?

And the reason I am trying to be sugar free is because of the bone used in the process of filtration of some refined cane sugar. I am working towards no sugar so when my parents let me become vegan it will be easy to cut out sugar. Plus it is probably more healthy for me.

I am not sure on the pumpkin cookies, they are for a meeting tonight and I am not sure if I will take the risk of failure. So I am thinking about no bake cookies now. Here is my idea for a recipe:

- 3/4 cup maple syrup or karo syrup or molasses *edit: use molasses as a last restort
- 1/2 cup soy milk
- 3 tbsp vegetable or olive oil
- 2 tbsp cocoa
- 3 cups quick cooking oats
- 1/2 cup peanut butter

I will tell you how it goes.

the cookies were okay, the molasses is very strong tasting, I recommend anything else.

I agree cutting down on sugar is healthy, but some recipes are difficult with liquid sweetners. You can get unbleached sugar - it's widely available in the UK, but I know a lot of people in the US use Florida Crystals - I hear them mentioned a lot so I'm guessing they're fairly easy to find.

you can also find raw sugars around that are unproscessed and vegan friendly:D

Try agave nectar. It's good for baking. I use it for cupcakes and frostings all the time. It's totally vegan and it has a low glycemic index, which is better for your health than regular sugar. You can pick it up at a health food store or something like a Whole Foods or Wild Oats market.
