View Full Version : Egg replacer recipes

Every few years I buy some "egg replacer", try it in some recipes, get disenheartened with the results, and give up. That time has come around again. I generally carry a cynical attitude that vegan egg replacers are the cooking equivalent of a placebo. As in they work when the recipe itself would have worked anyhow without the eggs. But others seem to swear by them, so I keep thinking there must be something in it.
The brand I bought is "Allergycare Vegan Whole Egg Replacer". Can anyone
please recommend any recipes they feel work well with egg replacers?

I've just cut open a Victoria Sponge I cooked from a recipe in a "traditional" cooking book which originally had two eggs. It's flat, having risen only very slightly, about half what would be expected of a proper cake. The egg replacer I'm using doesn't have raising agents in it, so I suppose I should have tried adding more baking powder. But still it's generally a very discouraging result.
I'm going to try an egg-based stuffing recipe to see how that turns out. And as soon as I've posted this, I'm following the link you've given.
Edit: Ah yes, I see the point of the Mr Flibble recipe :) Sorry for starting a duplicate thread.
