Hi. Does anyone know how to make soft flapjacks like the ones extremely widely available in the UK? I keep looking for flapjack recipes, and have made a few, but they are always the harder baked flapjacks. Does anyone know of any soft flapjack recipes?

There's some (not necessarily 100% vegan) discussion of how to make soft flapjacks here

I always thought the shop ones were probably soft because of a high fat content, but that isn't mentioned in the Delia discussion I don't think.

Excuse my poor English (I'm American;)) Do you mean what we call "pancakes"?

I don't know what a "non-soft" one would be?

I learned of these from Bluedawg in the veganrepresent forum:

I made a half sized batch the other day and was impressed how close they seemed to the variety I grew up on. I used vanilla (sweetened) soy milk and had to add just a tiny extra bit more because the original recipe amount made it rather thick, but some people may prefer that.

Thanks Harpy, I'm off to your link to have a look.

Mahk, I mean one of these. They are basically oats stuck together with fat and a (often syrup) form of sugar.

Edit: Where did my image disappear to? Here's a new one.

Interesting. We don't have those on our side of the pond. I assume it is sweetened, right?

Pancakes/flapjacks are a morning only/ breakfast food here. Serving them at night would be considered odd, except perhaps in a restaurant that specializes in them.

Yes, they are typically sweetened with sugar and golden syrup, which is, I think, about half way between corn syrup and molasses. They're sold in a lot of shops as a quick sweet snack, a slightly more healthy alternative to a chocolate bar.

woah, you call pancakes flapjacks? This forum really is a wealth of information.

anyway, here's the recipe I use whenever I do them: http://duramecho.com/Food/Flapjack/index.html

obv use vegan marge instead of butter. Like it says, it's the oven temperature that counts.

interesting.

i use a tried and tested recipe and cook at 150 - 170C and they STILL crunch up at the edges and on top if cooked for that long??
wonder if covering them with foil would help...
