today i was pushed for time and for a quick lunch put together a really speedy dip/pate;

1/2 avocado
handful spinach leaves
6 cherry toms
dash olive oil
celtic salt
black pepper
1/2 lemon juice

i dipped nori sheets and wholemeal pitta into it. :)

ohhhh looks really good!

I had some super good kale, collard, flax, spice raw flatbread with dinner that would go perfect with your dip!:)

my standard salad

one bunch kale
one bunch chard (anykind)
2 carrots shredded (or chopped up in the food processer) (beets work fab too!)
(the rest of these measurments are all guesses... i just toss things together!)
1/4 cup oilve oil
a little less than 1/2 cup apple cider vinager
a couple of table spoons of nama shoyu or braggs liquid aminos
three or four table spoons of raw agave nectar
a pinch of sea salt
1/2 cup of some kind of nuts or seeds i have used pumpkin seeds, sunflower seeds, slivered almonds, pinenuts

optional: one or two cloves of garlic gives diced it a bit of a kick!

i wash the greens and then tear them with my hands into a big bowl. add the ingredients and mix and tear the mess with my hands. its easier and everything mixes well that way, really!

this is my fav food on the earth!

i made a wonderful crunchy salad last night which i took to a potluck, which all went;

romaine lettuce, torn into chunks
red cabbage, sliced thinly
fennel, sliced thinly
spring/green onions sliced thinly
celery, sliced thinly
chives chopped
poppy seeds

i served it with a wonderful raw dressing "cucumber & orange dressing" from my new ani phyo book. i'll post the recipe soon - it's fab.

Is the ani phyo book all raw? I've heard several people mention it before and it seems to have some really good interesting recipes.:)

That dressing sounds really good. Do you happen to have a mustard-ish dressing recipe?
