Sorry the Jenster never measures. This is as easy as falling over and tastes pretty good.
Theory

Vegetable stock (home made or from cubes,)
Mashed potato (optional I just use it to add substance)
Tinned or fresh tomatos
Tomato puree
Fresh coriander
Olive oil


Method




Heat stock in a pan
blend tomatoes in a blender or using a hand blender
Add blended tomatos to pan
Add tomato puree
Add mashed potato until desired consistency acheived

Add chopped coriander to taste


Season to taste, add a spash of olive oil to give it a shimmery look


Voila!:D

That sounds lovely sugarmouse - I never thought of using mashed potato in soup but it seems a good idea. (Our cats currently have a fad for mashed potato so they would probably like us to make some as well :) )

lol at mashed potato eating pussycats!
I like using it now!It makes soup have more substance but is low fat and not as messy or fiddly as using other thickners like flour or whatever.
I have even sometimes used mega cheap instant mash powder lol jus pour it into the soup whilst cooking :D I am a cheat cook!

It's not so good when the cats get on the cooker to help themselves from the saucepan!

I don't really like flour in soup so this sounds like a great improvement. Will try to resist the instant mash temptation, though now you've put it into my head it may be difficult ;)

Lol it was my student staple! but it does come in handy. I usually add flavourings and soy marg and pretend I have made it myself.:)

mmm sounds yummy. my cats looove potatoes in any form. always found it odd.

I might try this but add a tbsp or 2 of potato flour because I just used the last of the 'tatoes I had at home :)

This sounds quite good, especially as it's been oddly chilly as of late.
