Happy new year lovely vegans!
I've been given a sack of paella rice from santa and was wondering if any of you knew a fantastic thing I might do with it....

do you know what..i don't have a recipe or anything..but i bet if you just bung in a load of veg and some paprika and stuf..i bet it'll be ace.
seems like you've got enough of the stuff to be able to do a little experimenting with.
bet someone else will have a snazzy recipe..did you have a peek around the recipe threads?

100g rice
250ml lightly salted water
Bring to boil and simmer for 20-25 minutes, until liquid is absorbed. Remove from heat and stand for 10 minutes.
2 tsp olive oil
Place in a pan with a little water.
2 onions, sliced
2 celery stalks, sliced finely
2 carrots, sliced finely
Add and cook for a few minutes to soften.
6 cauliflower florets
½ tsp turmeric
Few strands saffron
Add and cook for 5 minutes.
1 courgette, sliced finely
12 red pepper, sliced finely
Add and cook for 2 minutes then stir in the rice, along with spices of your choice. Paprika, chilli, etc
50g fresh peas
parsley, chopped
Sprinkle on top and serve.
for 4 people or 2 if really hungry.
