is there a recipe to share for the casserole, jambox?

Although, I didn't eat it that day. It had been frozen and apparently frost-bitten, because the texture was really gross. I hadn't really thawed or heated it though. It's great fresh!

I'll take Pavo's gyozas and Est's grilled veggies please!

Today: bbq tempeh sandwich w/ onions & peppers, grilled corn, carrot & celery sticks, roasted garlic dressing, grapes down the side

my new lunchbox and the contents for enjoyment tomorrow:

Cucumber, peppers, red onion and cherry tomato salad
3 veg spring rolls
Serving of wholewheat noodles
Baby carrots and rasins (in the little boxes)
(516 calories)

And the mini tub has soy sauce :) Simple, but hopefully nice!!

these all look so ace! ^^

what i don't get is how you can put all that stuff together and take it to work or wherever..and then when it comes to lunchtime, all the nicely compartmentalised stuff isn't all jumbled up together in one fantastic globulised mess :confused:

each bit has its very own little lid :D

P.S. someone buy me one for my birthday/wedding :D

Not every compartment has a lid, just one larger one and the teeny one. The lid of the box closes pretty tightly though, so unless there's something runny in there or you're playing hacky sack with your lunch, everything will pretty much stay in place.

Today: the makings of a taco salad - leaf lettuce, cilantro, refried black beans, salsa & nacho sauce layered, baked multigrain tortilla chips, guac

Mine seems to have survived the journey to work, even the noodles :)

I think you're asking for the recipe? It's not a recipe really, I made bbq sauce (still tweaking that recipe), bought the tempeh pre-sliced, marinated in the sauce for a half hour or so, then grilled it.

wow, your pizza looks so yummy :) I haven't tried using BBQ sauce on a pizza since being vegan, I have no idea why. I bet it's lovely with all those veg. mmm. *adds to list of things to try*

i'm in love with this thread, i almost wish i had a job to go to which involved taking a packed lunch!

Yep, little mini ones. They were from cccshop.co.uk, they have buy 3 get one free sale thingy at the moment :D

There's no way I would have the patience to carve carrot sculptures, LOL!

Est, I kind of made them up hoping for good results. Stretch out a small piece of pizza dough into a long, thin rectangle, spread with minced garlic, roll up like a cinnamon roll, and bake alongside the pizza. They would have been way better with some eb or almond parmesan on the inside, but I was rushing.

(Roasted red pepper hummous in the dip tub and a few squares of Montezuma dark choc with orange down the side!)

Each day I took a few vegan choc chip cookies for morning and afternoon tea breaks.

Several other delegates on the course have taken the web address for becky and lolo to buy their own lunch boxes! They thought mine looked v healthy and delish. I also managed to share some of the benefits of being vegan and they seemed interested and asked quite a few questions. You never know what these boxes may encourage them to try!

Today: brunch leftovers - roasted asparagus bundles, a roasted potato, spicy italian sausages, mini spinach tofu quiches on top, ginger pear waffles, fruit salad w/ agave lime dressing, mini muffins, coffee cake (I'll do a big post with more info in the pictures thread in a few days.)
