Need vegan whipped cream recipe!!!

Hello all,

I'm visiting my hometown and my mum is making strawberry shortcake tomorrow...and the one cookbook I brought with me doesn't have a vegan whipped cream recipe!

If anyone has a good recipe they'd like to post, I'd be eternally grateful...

Gosh that looks great! Wish I could get it here.

coconut cream (really thick stuff off the top) mixed with some icing sugar and sometimes I add some cocoa for a choc cream, isn't too bad. Most of the soy creams are revolting.

Oh and vanilla protein powder sounds much too exotic for Halifax but I'll see what I can find.

8oz silken tofu
½ cup brown rice syrup
1 tablespoon oil (not olive)
1 teaspoon vanilla extract
2 teaspoons lemon rind
pinch salt

Blend until very smooth and chill.
