fajita recipes

Does anyone know a really good, and easy, fajita recipe? I love fajitas and would love to make them at home but don't really know where to start:confused:

the bf recieved a fajita grill for xmas a few years back, so we just throw fresh veggies on there with a bit of olive oil and S&P.

found this recipe just now:

Tri-Color Fajitas
half red onion (cut length-wise and sliced)
large knob vegan margarine
chunk of cucumber (amount up to preference)
half green pepper (seeded and cut into thin strips)
half medium sized eggplant (cut into chunks)
half yellow pepper (seeded and cut into thin strips)
2 Tbs vegan sour cream
flour tortillas

In skillet, lightly fry peppers and onions in margarine, 2 minutes on high heat while constantly tossing veges.
Add eggplant, 30 seconds.
Season veggies with chilli oil, or with whatever flavor you choose.
Heat tortillas in microwave for 10 seconds or until warm and soft.
Spread sour cream on tortillas.
Top with veggies, wrap and enjoy.
