i haven't actually tried this recipe yet, as I just stumbled across it today. i will probably try to make it later in the week, so if anyone does try it sooner...please let me know. it sounds and looks really good!

makes 9 cups
active time 20 mins
total time 45 mins
you will need a handheld or conventional blender
serving size- 3/4 cup
calories- 110 (woo hoo!)
ingredients
1 tbsp pure olive oil
8 oz chopped onions
20 oz butternut squash (1/4 inch dice)
4 medium Bosc or Anjou pears- peeled cored and quartered
32 oz vegetable stock
1 tbsp minced fresh thyme
salt and pepper to taste
Tofutti non diary sour cream (optional)
1. heat oil on MEDIUM-LOW in large stockpot. Add onions & squash. Cook, covered, stirring occasionally for 10 mins.
2. Add pears, stock, and thyme. bring to a boil; reduce heat to LOW. simmer about 25 mins until squash and pears are tender.
3. Puree until smooth with blender *
add a dollop of sour cream (optional)
season to taste with salt and pepper.
* for the smoothest consistency, use a conventional blender. ladle small batches(about 2 cups at a time) into blender. puree until smooth. return soup to pot, heat on low.
