View Full Version : Leftover coconut milk - ideas needed

I've been cooking a lot of Thai food and often have some coconut milk left as I rarely use a full can.
Apart from putting it in other dishes, like curries etc... do you have any bright ideas for using up left-over coconut milk?

You can sustitue milk for some of the water when making rice. I just did this with jasmine rice a few days ago and then added lime zest and served it with jerk seitan. Its good with any caribbean style meal.
I am going to have to try a coconut smoothie though!

substitute for normal milk when you make porridge. muchos tastios :D

freeze in a small ziplock bag. In fridge goes rancid quickly and sooo fattening to slurp up regularly:(

Use it for dessert after said Thai food:
Thai Banana Sweet
1/4 420g can coconut milk
2tsp (or to taste) raw cane sugar
1 banana
Put the coconut milk and sugar into a saucepan, heat gently until warm.
Slice the banana, add it to the saucepan, and cook until softened.
Serve hot.

Don't hold me to it being salavatingly good though, never tried it :p
