Chickweed: Chickweed is delicate looking, sprawling little plant
with paired oval to spade-shaped leaves growing along a stringy stem. Once you see it, you'll recognize it. You can find it just about anywhere: in
gardens, edges of lawns, even moist woods. Chickweed is full of nutrients,
including vitamin C, rutin, biotin, choline, inosital, PABA, vitamin B6,
vitamin B12, vitamin D, and beta carotene. It also has several medicinal
properties. Chickweed can be added to various recipes, but is wonderful
raw, alone or in salads.
