View Full Version : Roasted Butternut Squash with Tofu, Green Beans and Almonds

this is a Cranks recipe ...

1 tbsp olive oil
Dash Tabasco
Mix together.

c900g squash, cut into 8 segments
2-4 cloves garlic, unpeeled
2 small red onions, quartered
Mix together and tip onto a tray – baste with the olive oil and tuck the garlic in so they don’t burn. Roast for 25 minutes until tender.

150g green beans
Cook in boiling water for 7 minutes. Refresh.

2 tbsp olive oil
275g tofu, cubed
Fry over a high heat for a minute.

2 tbsp tamari
Add, reduce heat slightly and fry until well browned. It will stick to bottom of pan, but that’s OK.

1 tsp tamari
30g almonds, slivered
1 tbsp maple syrup
About 7 minutes before the veg is ready, sprinkle with tamari and add the almonds and syrup. The almonds should crisp and caramelise in the syrup.

Serve the tofu on top of the roasted veg, with a crisp salad.
