Middle Eastern foods tends to be very vegetarian friendly. Eggs and dairy isn't often used in vegetarian dishes...so most food that sounds veggie is most likely vegan. Just ask, just in case. Look for falafel, hummus, babaganoush, foul medammas, various salads...

A useful Arabic word to know is "nabati" which basically means it's free of animal products. "Kadabi" is also useful, it means "fake". So instead of asking for soy milk in a supermarket, ask for "haleeb kadabi" ("fake milk") and they might understand you more.
